If you look at a thermostat, it's really restrictive. Even when open, the body restricts the flow a lot. Stuck open would cause the engine to warm up slowly in the morning, but it would probably run fine and get you home. You'd probably notice with a stuck tstat that the temp gauge fluctuates where normally it stayed precisely planted. The proper thermostat is absolutely necessary to keep the engine in the correct temperature range for efficient combustion. People keep doing things like putting in 165s and then have other problems show up down the road. It's a simple device but it's very important.

For the record, running with no thermostat will nearly always overheat. The coolant has to stay in the radiator long enough to shed heat, and removing the obstructive thermostat lets the water flow too fast through the radiator so it's still hot when it returns.
