I LOVE TRIPS TO THE DUMP! hehehe... Last time I visited my pops, my brother and I got to throw toilets off this cliff into bins 40ft. down! lol... 'BASHHHHHHH'
Hope all the details work out without any drama... I'm not FULLY understanding the "butt" and "Lap" lingo(but looking it up and learning, QUICKLY, lol).... but I don't want you to get all wet or ruin any of that hard work inside, either, ....so I'm watching and I'll gladly post anything I find when I cruise the 'Camper' Sites, lol.

butt joint is when the pieces come together at the edges. lap joint is when the pieces overlap a little. joggle is a small bend in one of the pieces of a lap joint that allows both pieces to sit flush on one side.

You coulda done without the joggle and just have the overlaps run down wind travel direction wise... or you coulda made a jig with a plane and 2 2x4s and variable arc swing press... 
if dude can tig the seams for you no worries... a plate joint would be good too... maybe even better...
I'd drill out the holes in the plate than use it as a pattern to drill out the roof... maybe borrow a few clecos to keep it in registry... after all the holes are done run a bead of urethane down both hole lines of the plate and cleco/rivet it together... the urethane will bond and seal the parts together...

So does that mean you have another 64 rivets to go? I can't believe you did most of those other rivets manually.

64 sounds a bit low, maybe more like 100-150 more... so, 80% finished then
and i think i'm done for the weekend. i'll get the rest of the trim pieces up later, but my trailer is good to go home now.

Looks great but dude you gotta do something about securing the tank... bungees ain't gonna cut it long term... on our old trailer we had an angle iron frame like you have and we drilled two holes either side of the frame and thru the steel stand on the bottom of the tank and bolted it to the frame with a pair of 3/8 bolts and nylok nuts... that thing was on there but good... but was still easy to remove for filling....
