ok, well the rims at summit racing that I want say a 4.25" backspacing and they are dished waaay more than my trd wheels. My wheels are "set" in at the center only about 1" or 1 1/4" and the summit wheels are about 4-4.5". What gives?? What is the offset and what is backspacing?? I'm very confused. I want my tires to stick out more and give me a wider stance. I'd like them about 2.5-3.5" outside the fenders. Thanks.

I don't know what to tell you other than to drop the spare and measure. That will confirm or debunk what I wrote above about your stock wheels. Once done with that you'll know for sure what the new rims will do... The other big factor is rim width. A Backspace of 4" on a 9" rim will provide a way different stance than a 4" backspace on a 7" rim. That's partly why the 'offset' term gets used by some. It reduces that "mystery meat" factor...
To measure go from the inside edge of the rim to the center mounting flange. The link I placed above will help a lot.
All you need to do a reasonably accurate measurement is a piece of 2x4 or straight edge about 16.5"-17" in length to lay across the rim and serve as a base for the tape. The second thing you need is a tape measure.
