Tire down size..
I recently purchased an 87 pickup 22r 5 speed 4x4 with 31×10.5s on pacer wheels. No sure the width of the wheel (assuming 7"-8"). Debating on going down to a 265/70r15 or 235/75r15 would this gain me anything? Truck is assumed to completely stock the 31st rub at full lock. Truck is a daily driver. Open to all tire size options

235s were stock on most trucks. It will get you some power taking off the 31s. I am surprised they rub. Must be a large offset. Getting rid of the offset will make it handle better.

I'm also surprised they rub, 31" was a dealer/factory option for the v6 trucks and 4runners. Likely it's your wheels.
I don't think you'll get better fuel economy unless you drive mostly in the city with stop and go. On the highway, the extra diameter of tire will lower your RPMs and give better fuel economy.
