I have the same problem with the gas gauge, has something to do with the sender inside the tank i believe
when i fill up, its about 14 gallons,
20 + ~ - a few due to my heavy right foot thats about 270miles
so i give myself a solid 250 before i start to worry, sometimes i forget, but ive never been stranded

Problem is usually the sending unit in the tank... I recall the unit is sold integral to the intank filter/pump unit, I replaced mine about 2 yrs ago I think it was about $100.00 you need to drop the tank to get to it figure on a couple hrs, labor charge. The fuel lines are usually rusted to heck and get broken during disconnection so plan on having to replace them too.
I get around 570 kms to a tank driving normally about 546kms if I let my inner meathead out. You ought to get about the same... try this fill the tank and a jerry can, zero the trip odometer and drive till you run out of gas... this will give you your answer... drop in the jerry can worth and get to a station and fill the truck.

hehe I remember when I got my first Toy.. I was blown away at what it could take on without even shrugging (my first 4x4 truck).
The best part is, the truck gets BETTER as you get more comfortable and familiar with the truck...
Enjoy your rig..

I don't think I've ever driven a vehicle that tells you more about the road you're on than a Toyota truck. You just have to be willing to listen.
