Help me settle my idle

New to me '87 Pickup. Sticky idle. I started easy and im going progressively more difficult. I got a new o-ring for my idle screw and cleaned the port. And i bypassed my dashpot because that's bunk, and a new one is like... $100+ anymore. That settled me down to between 700-1100. But when i drive, i can often enough let off the gas and end up idling at 1100rpm. A quick blip of the throttle will settle me back down to 750 9/10 times. Another problem i have is during frequent start-ups and shut-downs (going to the gas station). I'll turn the truck off to pump, get back in when finished and crank, and it'll idle at like... 350-400 and shake like crazy (still warm though?). I took my throttle body off today and gave it a really solid cleaning, but i dont have an IAC valve on the bottom of my throttle body? I figured a replacement or cleaning was the next step, but my coolant lines run right into the throttle body. So I'll put it back together tomorrow and take a quick trip. But if that doesn't solvemy issue I'm at a loss. Any suggestions from the pro's would be wildly helpful
